Mini Strawberry Cheesecake Bites!!!

I love those recipes that we all grew up with, they are just too good to miss out on.
Mini Cheesecakes with graham cracker crust and creamy filling are a simple bite sized dessert. This cheesecake recipe is easy and delicious. Top with your favorite fresh fruit or pie filling.

These Mini Strawberry Cheesecake Bites are the perfect combination of creamy cheesecake and sweet strawberry flavor. The individual servings make them perfect for parties and gatherings, and they are easy to transport and serve.

 

 

Ingredients

2 8oz pkgs of cream cheese (softened to Room Temp)
•3/4 cup of Sugar
•3 (large) eggs
•1 tsp Vanilla Extract
•1 tbsp lemon juice (freshly squeezed, if you can!)
•Dash or 2 of lemon zest (optional)
•Mini Nilla Wafers (REGULAR! none of that LowFat shit..)
•1 can pie filling of your choice (Strawberry is always a winner)

 

 

Direction

Preheat your oven to 350°F (180°C). Line a muffin tin with paper liners.

In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of the prepared muffin tin.

In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, and beat until well combined. Add the eggs, one at a time, beating well after each addition.

Divide the cheesecake mixture evenly among the muffin cups, filling each about 3/4 full. Drop a spoonful of strawberry jam onto the center of each cheesecake. Use a toothpick or knife to gently swirl the jam into the cheesecake mixture.

Bake the cheesecakes for 18-20 minutes, or until the edges are set and the center is just slightly jiggly.

Remove the cheesecakes from the oven and let them cool in the muffin tin for a few minutes. Then, transfer them to a wire rack to cool completely.

Once the cheesecakes are cooled, refrigerate them for at least an hour before serving.
