Spring is fragrant with all the peach trees, loaded with their ripe juicy fruits. One of the yearly things that are made is jars of the best preserves you have ever tasted. What a wonderful way to enjoy this southern fruit year round.
Ingredients
8 cups peeled, pitted, and sliced peaches (about 4 pounds)
2 tablespoons lemon juice
1 package powdered pectin
7 cups sugar
Directions
1.) Combine peaches, lemon juice, and pectin in a large sauce pot.
2.) Bring to a rolling boil, stirring gently.
3.) Add sugar.
4.) Return to rolling boil. Boil hard 1 minute, stirring constantly.
5.)Remove from heat.
6.)Skim foam if necessary.
7.) Pour hot into hot jars, leaving 1/4- inch head space.
8.)Adjust caps.
9.)Process 10 minutes in boiling water bath.
Yield: about six 12-ounce jars.
