1 lb cooked ground beef
1/2 cup of onion (diced)
1 – 10.5 oz. can cream of chicken soup
1 cup of frozen peas and carrots, thawed
1/4 cup milk + 2/3 cup milk
2 eggs, lightly beaten
2 – 8.5 oz. boxes Jiffy Corn Muffin Mix
2 cups of shredded cheddar cheese
Salt and pepper to taste


Preheat oven to 350-degrees. Liberally grease a 9″ x 13″ casserole dish.
Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to a large bowl. Mix everything together and spread into the bottom of the prepared casserole dish.
In another large bowl, add the cooked ground beef, diced onion, vegetables, cream of chicken soup, the 1/4 cup of milk, salt and pepper, and half of the shredded cheese.
Mix everything together well.
Spread this mixture over the top of the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
Bake for 30-minutes, or until the cheese is melted and bubbly
